Ingredients:
Beets
Olive Oil
Salt and pepper
Directions:
Heat the oven to 375°F and arrange a rack in the middle.
Rinse the beets and trim off stems and any leafy greens (save greens for another dish).
Drizzle with olive oil. Seal in aluminum foil and place in the oven.
Roast until fork tender - anywhere from 30 minutes to over an hour depending upon size of beets.
Remove from the oven and let cool.
Skins will easily slip off or peel.
Serve warm.
