Both beets and swiss chard are members of the same family and the edible leaves of the beet root are similar in texture and taste to swiss chard.
Beet greens are delicious sautéed alone or in combination with other greens, steamed, or added to salads, soups or stews.
Trim the greens back to about 2-inches from the beet and store them in a bag in the refrigerator crisper drawer where they should last for a week or so.
