High water content is what gives the cucumber its cool, refreshing flavor. The skin ranges in color from white to dark green and is either smooth or ridged, depending on the variety. The flesh is usually pale green in color with either edible seeds, or seedless.
Cucumbers are very versatile and may be enjoyed in salads, as a salad dressing, topping for fish, a refreshing summer drink, grilled, or enjoyed raw alone or with a dip. They can also be pureed into a cold soup, used to make light sandwiches, or added to tuna or chicken salad.
Cucumbers can be stored unwashed (loose or bagged) in the crisper drawer of the refrigerator. Excess cucumbers can be pickled to enjoy out of season.
