Garlic bulbs average about 2 inches in height and consist of several small separate cloves. Both the individual cloves and the bulb are surrounded by a paper like sheath that is most commonly white; although it can be found in shades of pink and purple as well.
Chopped garlic can be added to almost any meal or it can roasted whole and the pulp used as a spread on bread or crackers. If roasting meat, try making small slices in the meat and inserting a small clove or half a large clove to infuse the meat with a garlic flavor.
The sulfur compounds found in garlic have been shown to function as antioxidants and provide anti-inflammatory benefits. It is also a very good source of vitamin B6 and C and a good source of protein and thiamin. (WH Foods)
