Kale is a leafy green vegetable that is a member of the cabbage family. There are several varieties including curly kale, ornamental kale and dinosaur, all of which differ slightly in taste and texture along with appearance. The plants with smaller leaves tend to be more tender and mild in flavor than those with larger leaves.
All varieties of kale can be steamed, sautéed, boiled, added to soups or stews, or even baked with some olive oil and salt to make kale chips!
