Potatoes

Potatoes are the number one vegetable crop in the world. They belong to the Solanaceae family whose other members include tomatoes, eggplants, peppers, and tomatillos. The part of the plant we eat is the swollen portion of the underground stem which designed to provide food for the green leafy portion of the plant.

Most commonly mashed, baked, or fried, people often consider potatoes as comfort food. They can also be added to soups and stews or served chilled in salads.

Potatoes are a very good source of vitamin C, a good source of vitamin B6, copper, potassium, manganese, and dietary fiber.
