Radicchio is a leaf chicory along with endive and escarole. Varieties range from small compact round heads similar to cabbage, to long pointed heads like endive. All varieties are pink/red in color with white veins and have a slightly bitter taste when consumed raw.
Radicchio is most commonly found in mixed green salads but can also be roasted, baked or grilled whole to bring a sweeter flavor to the leaves.
Because of it's dark color, radicchio is an excellent source of many nutrients including Vitamins K, E and C. One serving has 10 percent of your daily value of folate, which is essential for healthy cell building, and contains the compound intybin, which helps with digestion.
