TURNIP GREENS

We grow the purple-top white globe turnip at Natural Springs Garden.  It is an heirloom turnip with a sweetly mild flavor and crisp smooth texture.

Both the root and the green are edible and both are a great addition to soups and stews. Turnip greens can be substituted for other greens such as spinach, kale, or collards. Turnip greens can be bitter in flavor (due to their high calcium content) but this easily resolved by adding a small amount of vinegar or lemon juice at the end of the cooking process.

Turnip greens contain four times as much calcium than other cruciferous vegetables like cabbage. They are an excellent source of many vitamins such as vitamin K, A, C, E, B6, folate, calcium, and copper. (WH Foods)
