TURNIPS

Turnips are one of the most ancient of vegetables and are believed to have first been cultivated almost 4,000 years ago.  We grow the purple-top white globe turnip at Natural Springs Garden.  It is an heirloom turnip with a sweetly mild flavor and crisp smooth texture.

Both the root and the green are edible and both are a great addition to soups and stews. The root can be substituted for potato in many recipes since they are similar in texture.

Turnips are an excellent source of many vitamins such as vitamin K, A, C, E, B6, folate, calcium, and copper. They are also a good source of potassium, iron, and vitamin B2. (WH Foods)
